Asian Greens Salad with Ginger Miso Dressing

Ingredients
Dressing
- 2-inch fresh ginger, coarsely chopped
- 2 tbsp white miso
- 3 tbsp sesame paste
- ½ cup water
- 3 tbsp fresh lemon juice
Salad
- 5 ounces (1/2 cup) of Asian mixed greens (mizuna, baby spinach, chard, mustard greens)
- 1 small radish, sliced into rounds
- 1 carrot, cut into slender sticks
- 2 green onions (white part only), chopped
Steps
Dressing
- Use a blender to blend ginger, miso, sesame paste, water, and lemon juice to obtain a smooth consistency (like cream).
- Strain the dressing with a fine sieve.
Salad
- Arrange greens in serving plates
- Arrange radish and carrots, and sprinkle with green onions
- Drizzle dressing over salad to serve
