Asian Greens Salad with Ginger Miso Dressing

Ingredients

Dressing

  • 2-inch fresh ginger, coarsely chopped
  • 2 tbsp white miso
  • 3 tbsp sesame paste
  • ½ cup water
  • 3 tbsp fresh lemon juice

Salad

  • 5 ounces (1/2 cup) of Asian mixed greens (mizuna, baby spinach, chard, mustard greens)
  • 1 small radish, sliced into rounds
  • 1 carrot, cut into slender sticks
  • 2 green onions (white part only), chopped

Steps

Dressing

  1. Use a blender to blend ginger, miso, sesame paste, water, and lemon juice to obtain a smooth consistency (like cream).
  2. Strain the dressing with a fine sieve.

Salad

  1. Arrange greens in serving plates
  2. Arrange radish and carrots, and sprinkle with green onions
  3. Drizzle dressing over salad to serve
