Smashed Cucumber Salad

Ingredients
- 2-3 cloves of minced garlic
- 1 teaspoon of chilli powder or 1-2 fresh chili (Optional)
- 1/4 cup cilantro leaves
- 1 teaspoon salt
- 1 teaspoon sugar
- ½ teaspoon oyster sauce
- 2 teaspoons Zhenjiang vinegar
- 2 teaspoons soy sauce
- ½ teaspoon sesame oil
Instructions
- Wash the cucumber under tap water.
- Use a rolling pin to SMASH the cucumber or place the side of the knife over the cucumber, then use your palm to smack the knife, until the cucumber starts to split.
- Cut the cucumber into short pieces and place them into a small bowl.
- Use a small amount of salt to marinate the cucumber for 15 mins. (Get rid of excess water inside the cucumber and make it taste better)
- Pour out extra water from the cucumber and start seasoning.
- Mixed all the ingredients above then cover the bowl with plastic wrap.
- Put the bowl into the refrigerator for about 15 mins to allow flavours to mingle.
- Dress it with cilantro leaves and you are ready to serve!
