Kale Beet Salad

Servings: 2 as a main or 4 as a side
Ingredients
- 3-4 large curly kale leaves
- 1 medium raw beet
- 2 tsp olive oil
- Salt
- 2 tsp sesame oil
- 3 tsp lemon juice
- 1 tsp soy sauce
- 1 tsp apple cider vinegar
Steps
- Thinly slice kale leaves and place in a medium bowl. Add olive oil and a pinch of salt to the kale and massage kale for two minutes to soften up. Set aside.
- Peel and grate beet. Add grated beets to massaged kale.
- Dress beets and kale with sesame oil, lemon juice, soy sauce and apple cider vinegar.
- Toss salad and add salt to taste.
