Kale Beet Salad

Servings: 2 as a main or 4 as a side

Ingredients

  • 3-4 large curly kale leaves
  • 1 medium raw beet
  • 2 tsp olive oil
  • Salt
  • 2 tsp sesame oil
  • 3 tsp lemon juice
  • 1 tsp soy sauce
  • 1 tsp apple cider vinegar

Steps

  1. Thinly slice kale leaves and place in a medium bowl. Add olive oil and a pinch of salt to the kale and massage kale for two minutes to soften up. Set aside.

  2. Peel and grate beet. Add grated beets to massaged kale.

  3. Dress beets and kale with sesame oil, lemon juice, soy sauce and apple cider vinegar.
  4. Toss salad and add salt to taste.
